I checked my profile settings and I cannot find the e-mail address I used to sign up here... What am I missing?

It's on the User CP, to the right of your avatar. (MyBB's default user CP could use a bit of work, to say the least. )

Oh, thanks. I no longer have that e-mail address. I am going to change it. Please re-activate my account after I change it...

I can change it administratively if it gives you any issues. Just PM me the email that you plan on switching to and I can do it from the ACP to avoid email reactivation issues.
